SUPER easy 1-pot - Scallion (Green Onion) Tofu
Tofu is my favorite ingredient to turn into a delicious dish. I love all types of tofu - soft, medium-firm, firm, extra firm. I've also been seeing a lot of black bean tofu here in Chengdu and loved the taste so much! I hope this one pot dish can be your regular meals. :)

300 g firm tofu pressed
2 large scallions/green onions
1 red chili skip for no heat
Cooking oil
Salt to prevent tofu from sticking to the wok
Sauce
1 tablespoon vegan oyster sauce
1 tablespoon soy sauce plus more
½ teaspoon sugar
1 tablespoon cornstarch
¾ cup of water

Have you ever tried peanut sprouts? It's also called longevity sprouts :) I'm a big fan of mung bean, soybean, and pea sprouts for stir-fry dishes. Savory, vinegary, and fragrant - is how I described this dish! Yu Xiang translates to fish fragrant while rou si means shredded pork is one of the popular and common dishes here in Chengdu. Didn't know these were a commonplace dish! Came across a few stores in Malaysia selling their homemade black garlic chili oil noodles, was impressed so I tried making it myself. It definitely tastes amazing and takes minimal effort to make! As a health-conscious office lady though, I became more intrigued with its health benefits. Black garlic actually does more than just a novelty condiment. It's clinically proven to improve blood sugar control, heart protection, brain health, liver health, increase immunity, and in some cases, even reduce the growth of colon cancer cells. That took me to the rabbit hole of health supplements, where I found my diet hack using "Root King Q10 Black Garlic" 😆
